Easy Pasta Salad Recipe
Ingredients:
- 20 oz bag refrigerated cheese tortellini
- 2 cups fresh, clean kale, chopped
- 1/2 c red bell pepper, chopped
- 1 cup crumbled feta cheese
- 1/2 jar sun dried tomatoes, sliced
- 1/2 c red wine vinaigrette
- Basil, oregano, salt, pepper-to taste
Optional Variations:
- 1 c shredded Parmesan instead of feta
- 2 cups fresh chopped spinach instead of kale
- 1/2 c Italian dressing instead of red wine vinaigrette
- Grilled chicken can be added to make this easy pasta salad a meal.
Instructions:
Boil the pasta for 5 min, rinse in cold water.
Massage kale with a drizzle of olive oil.
Mix all ingredients together. Chill. Store in airtight container in the refrigerator for up to 5 days. Enjoy!
